I know for sure it will not add attack due to big bang updates, but if you add str will it build up more defense?

It would, but I wouldn't recommend doing it.
Str: Weapon Defense
Int: Magic Defense
I'm pretty sure Luk and Dex give 1/2 Weapon Def and 1/2 Magic Def
