Would I be able to

take out the HDD on my Lenovo V570 then put in an SSD and install Windows on that then transfer the stuff I have on the HDD with a SATA to USB adapter? Or would it be too risky on a laptop. Sorry if this is a stupid question I'm used to working with desktops.

The procedure would be pretty much as you described it.
As far as "risky", the HDD would be smaller than you're used to seeing in the desktop, and of course it would be hanging outside on an adapter so you'd have to be careful of it while you're working with it, but as long as you =are= careful, it wouldn't be all that much more "risky" than working with a desktop.

You could install the HDD in an external enclosure, which would give it more protection than just plugging it into an adapter, and would let you use it as an external for your laptop when you're done with the SSD installation.
