Customizing Computer Help

I'm planning to get a brand new customized gaming computer made since my laptop broke recently. I'm planning to get a desktop this time. So I was at a computer store today and I asked the guy there for some details on parts and prices. I don't know much when it comes to hardwares but I know there are some who do on basil. So I'm here to ask a few questions.
I asked him for a really good gaming computer and he told me he can build a CPU with these:
Intel Core i7 960
6GB Ram
Asus GTX580 Graphic Card
~$1680

Intel Core i7 2600k
12 or 8 GB Ram (i forgot)
Asus GTX460 Graphic Card
~$1300

So my questions are:
Am I missing any important parts for a gaming computer?
Are these specs good? And are these hardware some of the best, cause he said it was.
Is there a difference between Asus GTX580 and nVidia GTX580?
Of course he is charging me for putting it together but by around how much, and is it worth it?

I want to make sure of everything before I spend this money on it. And since I'm spending this much money on the CPU I'm planning to get an 23" monitor atleast.

For gaming the best would be:
i5-2500k socket LGA 1555, also called Sandy bridge. They are the newest generation from intel and the most powerfull cpus on the market atm. Its not any difference between i7-2600k and i5-2500k besides hyperthreading. This is not something you will use ingame so I would go with the i5, because of price
Asus p8p67 or the pro or deluxe version./ MSI p67a-gd65 / Asus sabertooth P67, these are all 1555 mobos that are very nice
Nvidia gtx 570/580, but i would get the 570 because the price difference is waaay more than performance.
Harddisk: Get a SSD for OS and games, and a samsung spinpoint f3 for storage.
Powersupply: Corsair hx/ax 750w or find any other one that is modular!
Ram: corsair xms3 1600mhz

This is a nice setup that isnt too expensive if you see it performance wise. GL on buying computer parts. (But you SHOULD buy sandy bridge CPU, its so better)
