I can't really find any consistent ways to raise these traits. How does one do so?

They never changed the original ways to farm them.

No those mobs give +12 ambition and +8 willpower each. No insight.

don't put your fingers in your mouth
Herbalism and Alchemy. Harvesting herbs gives you one of those, forgot which, and crafting oils and potions gets you the other, I believe.
