So there's a whole list of people to fight, but each persons repeatable. Is there any reason to kill a specific person?

I just do Alang, i think he's the easiest imo
No reason in particular. I just killed Alang 10x. Up to your preference I guess, Red tiger/Gold dragon are "hard", so if you want more of a challenge then go for those I guess.
