I highly suggest you check these two out, their soundtrack and art style is quite nice.
Fullmetal Alchemist and then after watch Brotherhood. There's a reason why so many people here have recommended it. I'm really surprised nobody suggested Cowboy bebop also...

Blesch and Naruto, as mentioned from posters before, but just be aaare that these two animes are really long, in terms of episodes and does have a pretty good portion of foller episodes, not to mention the movies that are also available to watch.
For Naruto, i particularly enjoyed the original, but not really liking its sequel, Naruto Shippuden. Bht thats just my opinion

I would most certainly recommend Fate/Zero! ufotable pride!
Oh and if you enjoy/like Fate/Zero, you can also watch the new fate/stay unlimited blades work remake, also by ufotable (awesome company that makes awesome anime <3)
Definitely continue Stein;Gates, gets quite good as you keep going!
here are other recommendations in no particular order:
*Kara no Kyoukai (just pure epicness, but is sort of psychological and can be a bit confusing, but it's worth it imo )
*Darker than Black (especially if you enjoyed Fate/Zero)
*Berserk (kind of an old animation, but thought the story was superb, but does contain quite a bit of gore and "some" nude scenes (like 2, but are there for a reason, not really for fan service)
*Gurren Lagann, mostly for the laughs and decent storyline
*Shakugan no Shana (at least the first 2 seasons, the 3rd one can be a bit iffy, unless you want more; although i quite enjoyed it)
*Knights of Sidonia (If your into mechs and/or looking for an interesting CG anime, only season 1 right now, but season 2 is announced)
*Psycho Pass New Edit (basically a remake of the original series compressed into 11 movie-like episodes, would recommend this over the original, as new scenes are added and looks a bit nicer overall)
*Could try Garo: Honoo no Kokuin (currently still airing)
There's probably more to this list, but I'll leave it as this for now, as the other anime recommendations would depend on your preference and such. Just seeing if these animes match what you like first, enjoy!
Edit: and some of the ones I was gonna mention were mentioned on above posts, such as shingki no kyojin (attack on titans) and Kill la Kill
heard some good things about Fullmetal Achemist Brotherhood, but have yet to start it, but can't say much on that.
I also did enjoy SAO, No Game No Life and Aldnoah Zero too! (Waiting on season 2!)

If not, go watch Gurren Lagann. Its kinda stupid, sure, but its also one of the best motivational things i've ever seen, and just put a smile on my face every single second. Its infinitely quotable, and overall one of my favorites.

What you enjoyed and what you didn't enjoy seem to contradict greatly. I get that you're into shonen but like I don't actually know if I can recommend you anything you'd like.
