Do we lose Profession mastery during server checks?
Let's say we start losing a certain amount after 14 hours of no crafting (I don't know if that's the actual figure) and I've gone 13 hours without it. Then a server check occurs which lasts for 5 hours and I come back right once the game is up.
Would I have lost 4 hours worth of mastery or would I still have 1 hour to do it? Would be pretty stupid if we lost during them but I just want to be sure.

Yes, you do. Best bet is to just try to set an alarm for half hour before maintenance should start and craft something quickly and log out.
