I also found it meh. Even as a kid, I loved Beauty and the Beast but I just didn't like TLK that much-- it's been quite obvious to me from the beginning.
It's honestly a nostalgia thing for me. I really loved it as a child, so I kinda feel like that when I watch it again. It's the same as when I play pokemon again: I just feel like a kid.

I loved Lion King when it came out 20 years ago, and I still love it as a grown up. Disney was on a hot streak; they'd made Aladdin and Beauty and the Beast in the few years preceding it. It's basically a re-telling of Hamlet, so I'd argue that the appeal is kinda timeless.
