Is it possible for animals
to completely change their diet?
Like can True Herbivores turn (evolve) into True Carnivores?
Can True Carnivores turn/evolve into True Herbivores?
Ex:
XX years from now, Mice/rodents hunt in packs and kill for food.
YY years from now, the Feline species (lions, cheetahs, etc) eat strictly vegetation.
Or would it be impossible-----the animals/species would die due to the extreme change in diet?

Yes. We (some of us) evolved to be able to consume other mammal's milk. That sheet ain't natural. It takes a really long time. You can't make your dog a vegan; stop trying lady down the street.
Panda bears are omnivores that no longer eat meat. Take that as you will. They still can eat and digest it, they just don't.
Of course it's possible, it's already happened millions of times.
If dinosaurs weren't cold blooded or warm blooded anything is possible in the realm of speculation.
As above stated, only due to extreme environmental conditions. For this to occur naturally, it would take years of genetic mutation for there to be a "new" species of mice that ate solely meats.
It could be possible their environment changed in such a way that allowed for a genetic mutation to persist and thrive towards promoting that kind of diet.
Outside of evolution, the only realistic way would be through human influence.
Can you imagine a horde of mice coming your way to kill you, OP?
