Accessory Crafting is probably the most profitable if you want to sell off items you've made, however all are good. Smithing you can make cubes, hearts and armor however remain untradeable while Alchemy you can extract and fuse items as well as make EXP Pots, etc. If you like to cube items or sell service that would be even better than Accessory Crafting. Depends on which method you'd prefer.
