What combo to use?

Hello basil.
Recently I've been leveling up my dawn warrior to level 120 and I thought it was time to get some peridots (5/10)
and make myself a UA Pally, just because I never had a Pally before <3
But I was wondering what's the best combo to use untill what level?
2H Sword untill level xx and 1H Sword + Shield at level xx ?
Please help me out a bit.

2H until you get Shield Mastery than 1H+Shield (I think)
Or you could just go 1H the whole way.
You should max Fire first.
