Chaos came shortly after Big Bang and was the second "huge" patch with the introduction of crafting, Gate to the Future, PVP, and tons of class revamps.
Jump followed and introduced new PQs, Monster Park, and revamps for three of the four original classes.
After that was Legends with Mercedes, Cannoneer, and Demon Slayer which created the huge class boom.
Alliance followed Legends with LHC changes, Arkarium, and a lot of revamps.
Justice was after with more revamps, Phantom and Jett release, instanced bosses, monster cards, and Azwan.
Tempest was next with lowering the job advancement levels, removing the secondary stat requirement on equipment, introducing Magnus and Hyperskills, and releasing Luminous, Kaiser, and Angelic Buster.
Unlimited was the most recent update that made significant changes to the entirety of the game. It brought the increase in the damage cap, new window designs, increased drop rates by 5-10x, boss health buff, Avenger and Xenon releases, Root Abyss, and the failed project that is Monster Life.
Cygnus Returns overhauled the five Cygnus Knights, essentially creating five new classes (three for GMS as Blaze Wizard and Night Walker were later). It also increased the meso cap to 10b, introduced Chaos Root Abyss bosses, and overhauled the Cash Shop.
RED came with the complete Explorer overhaul, Open Advancement system, Professions revamp, 4th job Mastery Books changes, Commerci, Kritias, and the release of Zero.
FLY was supposed to be the next large patch, however GMS split it between two smaller patches labeled "Grand Athenaeum" and "Legacy of Nine", with more world-merged PQs, the guild revamp, and some small changes to a number of classes.
You & I (Rising Heroes ala GMS) was the last HUGE revamp with the buddy system reorganization, combo kills, party play areas, Elite Monsters, new animations, Honor system revamp, Shade/Eunwol release, and the Tower of Oz.

I still think Big Bang was the last big update.
