At least in the last attendance event (which looked identical to this event), if you didn't collect the week's reward on the last day, it disappeared when the next week started.
For some reason (can't remember what was going on at that moment), I put off getting the reward and at midnight PST the button greyed out and I couldn't get it.
I'm sure you can collect it. It would be kind of stupid of Nexon to make it that way. Though I think today counted as day 7 of the maple attendance? I may be wrong though, I skip over events and stuff on the patch notes lol
