Cosmos Knockout Dual Blade Tip
Just thought I'd mention this as I didn't realize it at first.
Flying Assaulter works on the map so even if the springs work either too weak or too strong, you can use the skill to change direction and get the nut coins easily.
I ended up stacking about 19 after I got the hang of it.
Pretty sure all springs work at the same strength every go too so once you get to know each one its easy to get the coins.
