Switching out Professions
If I were to unlearn one of my professions to learn a different one, and unlearned the new profession and went back to the old profession, would it still be the same level as before?
So if I give up my lvl 10 smithing for alchemy or something, and later gave up alchemy for smithing, would I still have lvl 10 smithing?
I'm sure it's been asked before, but can't find any threads >.<

If you "unlearn," you have to "relearn."
Basically you start over at level 1 because you're "relearning."
