Iron is easiest since you barely need anything to make it and you can buy the ores from the npc
If you are doing deluxe I think the lowest level you can make is gold, go with that its easy to forge anyways. If you find random useless scrolls you can toss them on.
Gold is the best. It's the highest level heart (most slots) you can get without using Superior Crystals.
