You need mining for Smithing. If, however, you have Alchemy and can't learn Smithing because of that, then just unlearn that. Otherwise, you can still learn Smithing. You can have Mining, Herbalism and one other job.
You don't need to get rid of it, you can still learn herbalism
@EminemsAreBad: You can learn mining, herbalism, and smithing/alchemy/jewel crafting. You have to talk to the smithing npc to learn smithing though, he's on the left-middle side of the map

There's no option for that.
I want to learn smithing.
I already have Herbalism and Alchemy.
There's no need to, you can learn both herbalism and mining now. You can't unlearn these two once learned.
Talk to the mining NPC "Unlearn Mining" IIRC
