OP's list is hardly gore at all,
Elfin lied is so much of a joke that it is funny.
School days has one like 2 min long part with a head in a bag ohhh soo violent.
OT: I used to watch a ton of Psychological and gore anime, but as of recently it has not been good.
Shiki - slowish start but once it starts moving blood hits the fan.
Hellsing Ultimate - obvious reasons already posted.
Another - somewhat realistic deaths and a good story.
Umineko no naku koro ni (uncensored) - makes higurashi look like a little kids story with its gore.
Rin : Daughters of Mnemosyne (18+) - gore that includes, arms being shot off, forced body piercing, and a ton of other stuff.
And other stuff that i cbf looking through my hard drive for.
To be fair elfin lied was the first really gory manga of its kind that I ever read so somewhere not too deep inside of me I was like "omg so gory so many naked females blood nakey blood nakey non-consensual sex" sooo yeah that has made an imprint on me.
I can't say much for anime (sorry) but if you want a gory manga try ichi the killer http://www.mangaupdates.com/series.html?id=2421
Btooom! - about characters being forced to play a game of death
Another- murder mystery, pretty good
If you haven't already watched Afro Samurai then you should because it's insanely gory
The Devil May Cry Anime was definitely one of the most gory shows I've ever seen. Way more bloody the any of the games now that I think about.
Berserk is one I highly recommend. It starts out a bit 'meh' but seriously, give it time. The golden arc in particular is one of the most beautifully ultraviolent tragedies I've ever seen and I can guarantee that you will never forget the ending. (18+ : includes decapitation, dismemberment, nudity, lots of gore, and tons of other things that make it fun for whole family~)
The thing about the golden arc is that while there is a lot of violence, there is a lot more going on underneath it. It's a story that is very fun to analyze, so keep that in mind as you watch it.
Also, while I would recommend the anime it leaves a LOT of important stuff out especially near the end.
The movies do a far better job but they also leave things out too, but at least they tackle the important stuff.
If you want the clear best way to experience Berserk I'd of course say read the manga... but if you want to watch it than go for the movies, or both the movies and anime.
School Days was some major jimmy rustler.
I second Mirai Nikki. Oh lord.
RIP Berserk

Afro Samurai is the definition of gore lol. GORE WITH STYLE!
Attack on Titan can be considered a bit gory, though not on the same scale of shows like Elfen Lied.
Pupa (not aired yet) is going to be stupidly gory.
Claymore, from what I've seen, is pretty gory as well.
Ghost in the Shell has some pretty gory scenes.
Devil May Cry got gory too I think, but it's been a long time since I watched it so I might be wrong.
Despite the intense fanservice (which calmed down during the last part of the season)
High School of the Dead had a good amount of blood & gore
If Elfen Lied is on the list, i guess you can consider Freezing as well
Considering your taste in hardly 'violent' animes, you should look into Claymore, Black Lagoon, Berserk (original anime and especially the Golden Age Arc Movies), Ghost in the Shell, Neon Genesis Evanglelion (Episodes and Rebuilds), Hellsing (OVA), and Monster (some parts are extremely violent, like the final four episodes, but in the end its a meticulous saga and is not violence focused).
Good shout, a difference should be noted between violence and " hyper Violence"
That difference being fictional , and semi-real .
Hellsing and Deadman Wonderland have amazing blood splatters and explosion , where as Ghost in the shell has almost realistic and brutal scene's of murder
Blade of the immortal is very very good, realistic sword fights with minor special powers and buckets of blood, spin tingling story too.
Like the guy quoted said , hardly violent , if you want violent there's one segment in the "animatrix" that is as near to a nightmare as your going to get .
Happy viewing
Another is pretty gory
Edit: Can't forget Mirai Nikki
Bokusatsu Tenshi Dokuro-chan
is SnK classified as violent?
