Seen plenty. Successfully mined few.
They spawn in just about any map that has ore/herb veins. Just like with heartstones and golden flowers there's no specific maps for them, it's just random. Granted you will have more luck finding them in maps that people don't usually frequent, like kerning square, mu lung, etc.

Seen both legendary herb/ore veins/patches in the same map in the beetle map right next to Leafre
