So if I recorded complete silence

If I were to record complete silence, then put on headphones and turn the silence all the way up, would it cancel sound?

Darkness is absence of light, silence is absence of noise. Recording silence and playing it back to cancel noise would be like using a flashlight that emits darkness to make a bright room dark.
