Why I should learn a profession

Hey so I've been back for like almost 2 months from a 2 year break, and I never really got into the whole crafting/alchemy thing.
What are the positives of doing it? Is it profitable? How profitable? Which profession is the best? Fastest way to level it up? How much time needs to invested into it for it to start paying the bills?

Cubes are ridiculous. General equips are better. You're gonna need all three professions to make the most use. Accessory crafting gets you some potential earrings and smithing gets you potential armors. Alchemy lets you fuse them to possibly get better potentials (it might be better than just crafting and revealing, but I'm not sure).

Smithing gets you cubes at highest levels. Granted, they take time and effort to make, but they're still cubes right? Just make arrows like hell and you should be there in no time. Now if Fatigue didn't exist....
