When I went in on my WK and was looking at my skills while waiting for the match to start I found a new skill I forget what it was called. It was only in there during PvP and basically it said that you get 1 Battle Atk for each 400 def. So it seems like def might actually increase your damage too. Haven't checked on any of my other characters to see if it is a skill for them too or just WKs. It was in the beginner section if anyone else wants to check on their characters.
I hit less on people with more defense.. such as warriors. I can hit "excellent" with inferno on something like mages or thieves, but on warriors it seems to be "great" more often than not.

Paladins do survive much longer than drks who have more hp, so yes.
