So I just read up about the Civil War (Captain America 3) and it says that in the aftermath, he *dies.*
Do you think they'd actually do that, or do I not have to worry?

it's not guaranteed. civil war also has a lot of characters not included in the marvel cinematic universe. what they usually do with movie plots is take the comic story arc and adapt it to the movie universe.

Then they get to be alive again in another universe.
Yes. Evans wants to quit acting which is perfect, because that way they can push Sebastian Stan into the role. Which is great because Bucky actually becomes Cap after his death.
