Fortunately the eyes are discernable from the shadow (although it may not be apparent from this low quality screenshot)

Might be hearsay but from doing the quests on my Gun Pirate in the Naughty Harbour a long time ago, I remember the Cool Jellyfish moved around at a much faster speed than their rather slow Jellyfish brethren. That's the only advice I can give to you for trying to discern the difference.
