Yes, but the change is so small that it isn't relevant.

I learned how the way we see stars is them in the past, but I never really thought to apply it to things like this.

by the time the image of yourself in the mirror goes from your eye to your brain for processing, the "you" in the mirror would already be the past.
But if you look at it this way, the "you" in the mirror is really your FUTURE self to the brain because it hasn't process that information yet.
in other terms, by the time your brain process the information on the mirror, the image of the mirror is already changed in reality.
This changes EVERYTHING
