Toaru Majutsu no Index, Shinsekai yori, Natsume Yuujinchou, and Darker than Black are some of my all time favorites.

Guilty Crown, Amagami SS, Accel World, Ano Natsu de Matteru, and Fate/Stay Night 5 way tie for my top spot
Utawarerumono for me. It's old but gold. One of the best story I have ever seen. Very exciting to watch, it's so fresh no matter how many time I rewatch

Rounding out the list (in no particular order), I like Elfen Lied (I crey evry tiem), Oh! Edo Rocket (comedy GOLD), Trigun (classic!), and Mushishi (dat art style tho).

I have a ton of favorite series:
-.Hack//Sign - very mellow in the beginning slow paced, not a lot of action but more psychological. One of those MMO based type anime
- Berserk OVA - Tons of Action, people getting cut in half, demons, knights ETC. Dark Medieval Fantasy
- Yu Yu Hakusho - Childhood favorite, demons, fighting ETC. Shonen
- Toradora - ROM COM
- Madoka Magica - Magical Grill with dark undertones
- Heartcatch Precure - Magical Grill
- Card Captors Sakura - Magical Grill
- Gurren Laggan - Robots, Spiral Energy, boobs. Shonen
- ONE PIECE - NOUGH SAID. Shonen
Some shows I think are good but not my top favorites:

Mawaru Penguin Drum, Steins;Gate, Kyoukai No Kanata
- Comedy
Genshiken, Magical Shopping Arcade Abenobashi
- For Action
Fate/ Unlimited Blade Works, (but watch that before you watch Fate/Zero, because if you do it the other way you will be disappointed), Fate/ Zero, Gantz but after a few episodes near the end it will turn into disappointment, same runs for the manga, Hellsing, Basalisk,

Code Geass
I really love the Monogatari Series (Bakemonogatari, Nisemonogatari, etc) to bits, but I'm well aware that it's not for everyone. Its humour just appealed to me, as did the animation style.
Other series on my list include Nichijou, Azumanga Daioh, Code Geass, Spice and Wolf, D-Frag!, and The Devil Is a Part-Timer. I can't really explain why I like them all, since I like them all for different reasons, but I'm more biased towards slice of life and comedies.
Am I allowed to only list one?
If so, Aria. It's just one of the most relaxing SoLs out there.
Mahou Shoujo Lyrical Nanoha, Shinsekai Yori, Kimi to Boku, Saiunkoko Monogatari, Kemono no Souja Erin and Natsume's Book of Friends are a few other favorites.
my favorite aren't necessarily the best ones I've seen but on the pure basis of enjoyment kuragehime, lovely complex, ohshc, and fma:b are it for me

Man I think I have read the absolute worst when it comes to Shoujo just to kill time and I can honestly say that Kimi ni Todoke is one hell of an agonizing experience.

@SilentLeaf55 To be honest , even if Amuro Ray took over Zeta Gundam, I'd probably be okay with it if the show brought something new to the table. Kira's whole deal in Destiny was basically just rehash of SEED, except that this time he also busted the MC's girlfriend and has to deal with whatever comes from that. And that made it kind of dull, especially because I don't really care about the blonde girl.
I'll definitely get to 0079 at some point since I've also got Origin, and it seems like a good idea to actually figure out who Char is before I watch his back story lol. I think I'll watch the full series when I find the time for it, since ime movies that compile a series tend to either be some wonky meta-commentary like Eva 2.22/3.33 or just not as good as the full series like Madoka's first two movies. Come to think of it, I also need to find the time to watch LoGH, and that's like 100 eps. Oh boy

@xoqtprincessxo: The sad thing is that Shinn Asuka's character development was abandoned once Kira Yamato took over the show (one of the reasons why Destiny isn't as well-received compared to SEED). But if you're worried about Kamille Bidan in Zeta Gundam (0079's sequel) getting his spot stolen by Amuro Ray (former protagonist) or Char Aznable (rival of former protagonist), he actually keeps his spot as the main character to the end. Kamille is similar to Shinn, except he grows as a character much more than Shinn ever did.
0079's movie trilogy (each movie is about 2 hours long) compiles the series really well, but the dub is pretty lackluster compared to the dub the series had ([url=https://www.youtube.com/watch?v=-zXQYsYwmxo]everyone pronounces "Gun-Dumb" as "Gun-Dam," though Char Aznable is voiced by Steven Blum[/url]). Zeta's compilation movies cut some important parts the series had, and ends differently. The series is still pretty good though, one of the more darker entries of Gundam that shows how brutal war can be. Fortunately, you don't have to watch Double Zeta to understand Unicorn or Char's Counterattack (former is a 7 episode OVA with 1 hour long episodes, and the latter is a movie), as it's pretty meh compared to the other series.
Turn A is part of the AU timeline, but it's meant to be at the very end of all Gundam timelines with the Dark History. The Turn A Gundam, created for interstellar warfare, is also designed to be the strongest Gundam in the series with its "Moonlight Butterfly" ability, a stream of nanomachines in the form of butterfly wings that dissolve metal into sand.
Gurren Lagann, Hunter x Hunter, and Magi are all too close for me to decide

@SilentLeaf55 I didn't think Destiny was nearly as entertaining as SEED, but chairman Durandal did have a luscious head of hair going for him. I wasn't super into any of the other characters tho, and especially not Shinn.
I actually do have 0079 somewhere on my computer and I watched 08th MS team a while ago. Not sure if Turn A is UC (it's got some weird shared timeline thing?) but it's around here somewhere too. It's always sort of intimidating to start a Gundam show since they're usually like 50 - 60 eps, and nobody got time for that.

If you like SEED, then what do you think about SEED Destiny? I'd say that's a hard one to be a fan of compared to SEED due to its flaws...
And I'd also recommend the UC Timeline; even though the animation is pretty old, it's still good. Some of the protagonists are [url=https://www.youtube.com/watch?v=J-7zMBrW1SI]angsty, but they improve significantly as the series progresses[/url]. You also have the [url=https://www.youtube.com/watch?v=4nxjtO8m9Pk]most famous rivalry pair (this is how they first met)[/url] in the series, and [url=https://www.youtube.com/watch?v=58pNa3o6F60]a certain captain's slap that turns people into real men[/url]...
